Instant Pot Yogurt, If You're Into That Sort of Thing

I've at last cracked a batch of yogurt whose consistency and flavor land really near Oui!

Into a 32 oz mason jar goes:

50g powdered milk

75g sugar, or whatever sweetener you like

Any flavoring that can take heat: right now I'm using part of a grated tonka bean, though I've also added a splash of vanilla once the scalding was done, and I might give cheesecake candy oil a shot down the line. Key lime juice tempts me, but I'm fairly sure that would just turn into paneer.

3g fruit pectin. Sure Jell is what I reach for.

Top it off with whole milk, leaving roughly an inch of headroom.

20g yogurt (Fage 5% does the job nicely)

If your blender accepts a mason jar, screw it on (mine does). If not, just blend it in the blender as usual. Run it on high for 60 secs.

Add hot water to the instant pot up to the 2/3 mark. Set the mason jar on a trivet inside, with the lid sitting LOOSE. Switch to saute and bring the jar up to 180 degrees, then keep it there for roughly 20 min. (For me that's about two 30 min saute cycles.)

Lift the jar out without scalding yourself. Let the milk inside drop to around 110 degrees. Mix in the 20g of yogurt plus any flavoring that heat would ruin.

Divide the mixture among six oui jars. Put something loose over them so water can't drip in. Silicone lids exist for exactly this. Place them on a trivet in the instant pot. Hit the yogurt setting. Off to bed. The next morning, move them to the fridge. They firm up more by the following day, though they're still decent by that evening.

I was also considering buying an InstaPot to use as a DIY autoclave…it has so many uses!

an autoclave, and on top of that it produces cannabutter. Plus it cooks food

I sure hope that's the case! My collection includes an ice cream maker, a food dehydrator, a George Foreman grill, a KitchenAid mixer, a tofu press, a pressure cooker, and likely a couple more items slipping my mind… yet the only ones that see any action are the Blendtec, the microwave, and the air fryer!

Truth be told, I can cook really well… but once I pulled off convincing my then-fiancé that he was in for homemade dinners: 🎵Stouffer’s! Nothing comes closer to home!🎵😂😂😂
 
I finally managed to make yogurt that's pretty close in texture and taste to Oui!

Whole milk to fill the jar all but an inch or so from the top.

20g yogurt (Fage 5% works great)

Screw the mason jar onto the blender if your blender works that way (mine does. If yours doesn't, just do it in the blender). Blend on high, 60 secs.

Fill the instant pot to the 2/3 Mark with hot water. Put the mason jar in it on a trivet, with a lid LOOSE on it. Turn it onto saute, and let the jar get to 180 degrees, and hold it there for about 20 min. (This takes about two 30 min saute cycles for me.)

Take the jar out of the pot without burning yourself. Let the milk in the jar cool to about 110 degrees. Stir in the 20g of yogurt and any flavoring that wouldn't be good with heat.

Pour the mix into six oui jars. Cover them loosely to keep water from dripping into them. They make silicone lids for them. Put them in the instant pot on a trivet. Turn the yogurt function on. Go to bed. In the morning, put them in the fridge. They'll be thicker the next day, but still fair by evening.
