Protein recipes

For me, the usual choice is fat-free Greek yoghurt (0%) combined with 1 scoop of protein powder, mixed berries, chia seeds, sliced banana, and some peanut butter. It's simple to exceed 50g of protein (and even more if you use bigger servings).
My version goes into a blender instead. Along with 2 scoops of protein, which comes to 50g, I throw in 1/2 an avocado to get some healthy fats in there. It makes a tasty way to kick off the morning or enjoy between meals.
That sounds delicious!! Avocado in smoothies is something I really enjoy - it comes out with more of a mousse texture.

A week's worth of vegetarian lunches, meal-prepped.

Black beans, 2 cans

Pink or pinto beans, 1 can

Crushed tomatoes, 1 can

1/2 cup basmati plus 1/2 cup quinoa, combined and cooked.

Flavor the beans however you like.

Chili powder or Indian spices both do the job

Divide into 5 lunch portions and add a little cheese on top.

591 calories, 31 grams of protein, 86 carbs, 16 g Fiber, 13 g fat.

Plus, since the rice gets cooked and then chilled, it turns into a type 3 resistant starch. Bonus!

Glycemic index goes down, and fewer calories get absorbed. That means Carbs fall to roughly 80g & fiber climbs to 20 g+. Another win for gut health.

If I've got them in the fridge, I'll toss in extras like edamame and diced veggies with the rice

After more protein? Add seitan and you can reach 50 g+

I keep it really easy. Give me sourdough topped with cottage cheese and 2 eggs fried sunny side up! So good. Add an Oikos yogurt on the side and that’s a breakfast packed with protein and fiber 🙂

Wraps are super simple. You just add seasoning to whatever protein you're having (fish, shrimp, tofu). Making a big batch ahead works well too — then all you do is warm it up when you want something fast. I mix up various sauces and dressings using plain greek yogurt. Add some of that in for a protein boost and taste, along with whichever lettuce you like. You brought up kids, and this works great for them as well. Fast, simple and healthy. No/low carb wraps, if you can get them, also give you plenty of fiber. Buy those for yourself and the regular ones for the kids.
Appreciate it — these are solid suggestions, though locating wraps here in Vietnam is quite a challenge. Still, I really like the concepts!
If cooking is something you enjoy, a simple recipe shouldn't be hard to track down. Another option: use an egg as a wrap? Or for something even less involved, just add it to lettuce and call it a salad?

Having access to that much fresh, wonderful food where you are is a real advantage!! 🙂
