Crypto taxation

I have zero experience with crypto, so please excuse how little I know.

When you sell crypto, does that trigger taxes? And wouldn't handling the tax paperwork for each crypto transaction be somewhat of a hassle?

In the US, crypto isn't treated as currency — it's classified as property. That means each purchase you make using it counts as a taxable event. Naturally, this only becomes relevant when you're earning profits, but the regulations themselves are quite involved.

Coinbase, at the very least, does allow it.

For instance, Edge lets you use a debit card via Banxa to purchase USDC in whichever variant you like.
