I love food. No surprise there. One of the things I love to do when I travel is experience other people and places cultures. Especially through their cuisine. Now that I am on my GLP1 journey, I am saving a bunch of money by not having to buy anywhere near the amount of groceries I was before. I can afford some more expensive and harder to get ingredients now. So if there are any foods that are specific to your country/state/province/city that you can share a recipe for, I would love to try making it at home. Sure I can just google recipes, but I don't want to just make them. I want to make them right. Like an actual local would make it. Not some influencer housewife with a blog and a cookbook.

So what do you all have for me? Let the adventure begin!

Things i respectfully request:

-My English friends, teach me how to make a proper cuppa. Also a proper English breakfast. I got to travel to the UK years ago and have tried to recreate an English breakfast when I got home, but it just doesn't hit the same. I don't know if its because we don't really have Heinz beans here or what.

-My Canadian friends, I need me some proper poutine! All the stuff we get down here in the states is a bastardized version. I got to have actual poutine in Montreal once and it was magical. Teach me your ways! Also what is the difference between Montreal beef and corned beef?

-Meine Deutschen Freunde, I wanna make some proper spaeztle. And what exactly is a Berliner? I know its a donut of some kind but I didn't get to have one when I visited Germany.

From my experience the key to finding great Poutine is to plan a motorcycle trip across some of the most remote roads of Northern Canada. After 20 hours on a bike, ANY poutine you can find will be the best food you've ever eaten! Ditto for coffee.

Cross cut ribs, bone-in, Bulgogi is just magical. Buy the meal at your local Korean grocery store. Grill open flame with portobello mushrooms and large onion slices. Served in a lettuce shell with rice.

Beijing Kao Ya (Peking Duck) is amazing, but not a quick meal. It's a bit of a ceremony. My favorite meal when I lived in China. And jhop-jhop but that was just a dozen or so various dishes piled on a lazy-Susan in the middle of a giant round table. Must've been a local name, I can't find any reference to that style meal online.

I think about food a lot. I have issues...
 
I will try to give you a local favorite

We love great breakfast tacos in Texas!

The key is going to be your salsa.

NOT Healthy-or in anyway low cal/fat

Salsa- (basically a Jalapeno Aioli)

believe it or not I tried for years to get this recipe!

Perfect for carnitas, Al Pastor, or breakfast tacos

Spicy- you can de-seed and devein if you want it more mild

5-6 jalapenos (more if you want a big batch)

slow cooked so they do not brown in oil- ideally low flavor like canola or vegetable

when softened put oil and peppers in processor add a few tablespoons of oil and Chicken bouillon (I use Knorr chicken caldo mix) if you do not have you can substitute salt liberally

one or the other not both

blend well

Once it is well blended add a little water at a time, between blending, until it has a consistency slightly thinner than mayo

Taco- I like chorizo and eggs- but tough to find a great chorizo here not sure how hard everywhere else

More common available:

One of my favorites is potato, sausage, and egg

Cook your breakfast sausage (not maple sausage) with potatoes and onions on med low until all done, not trying to brown meat or potatoes, just cooking all the way; and drain.

Add some oil ( I always used a little bacon fat there is a reason I am here) and start your scrambled eggs in pan cook slow and when they start to set add mix of sausage- finish low and slow until cooked to desired doneness. I like mine still a bit soft.

warm a flour tortilla- i like on flame but can do in a pan, no oil

wrap ingredients and add a little of your favorite cheese.

apply salsa on each bite (my style)

Imagine my surprise when my favorite green salsa was so simple..

pro-tip

Jalapenos that have distressed skin and hooked stems are hotter, perfect looking with straight stems are usually more mild.
